GIN

All our gins have a strong juniper character that comes from the organic juniper we use. After hand grinding, the juniper is macerated for one and a half days prior to starting the distillation.

Some of the other botanicals are added after a day, allowing for them to develop fully in the bases spirit. The most fragile are placed in the still just before distillation, some in the liquid and others in the vapor tray.
